It started with a perfumer who put a name to it.

In 1998, Shoji Nakamura, chief perfumer at Shiseido in Japan, identified the compound behind a smell people had been describing for generations without being able to place it. Japanese has a word for it: kareishu. In the lab it comes down to a single molecule, 2-nonenal, and it forms the same way in every body it forms in.

    At the same time, the body’s own antioxidant defenses, the ones that kept that oil stable for four decades, start to slow.

    The oil turns

    Unprotected oil meets oxygen and goes rancid. What is left behind is 2-nonenal: greasy, waxy and water repellent, which is why regular soap slides right over it.

How to use
